Anybody up for some nom-noms?

I've got some cheap 'n easy meal recipies for those of voracious appetites, minimal time, and even less funds. Here's first of many (if y'all would like) :

The tacos I had mentioned a few days back-
+Depending on how many (tacos) you can kill in a sitting, 2 pounds of ground beef and 2 decent-sized potatoes can last from three meals to four days worth.+

For starters, you'll need
-2 lbs. of ground beef **feel free to substitute with ground turkey, I just get beef since it's $2.68 per pack that size**
-2 decent-sized baking potatoes **add more or less depending on your potato nommage, rounds about to $2 here**
-corn or flour tortillas **pack of BIMBO brand goes for $1.89 for 20 small size**
(Optional seasonings)
-salt
-pepper
-garlic powder
-minced onions **can be subbed for diced white onions**

~Oo-rah! Cookin' time~
-Season and brown the meat to your liking, though I'd recommend at least until you cannot see any pinkage. Stirring and braking up the meat into finer sections; you want to be able to place spoonfuls in the tortilla. Be prepared to drain your saucepan (or pot) of any extra fat and water, a couple times at most. This expedites the cooking and lessens the grease content.

-While you're letting the meat sit, dice up those 'taters... size of finished product depends on how much of a chunk you desire. :) Upon completion, add in the saucepan and mix evenly. Here's when you want to lower your flame, let simmer, and stir occasionally. The potatoes will lose color and soften in consistancy when the dish is complete.

-Serve it up in the tortillas (or just a bowl). Add shredded cheese, salsa, or other condiments to give it a different kick as your tastebuds desire.

**total estimated meal prep-time: 30 minutes; average price: $7.00**

Excellent thread idea Vampeh, we have a few cooks on the forum (one of them being my girlfriend <3 ) who could share a thing or two. I do have a few Peruvian dishes to share sometime.

As for recipies...I actually have one, despite the fact that my friends and family refuse to let me in the kitchen.

Chocolate Trifle.

You need:
Crushed Heath bars
Chocolate pudding
Cool whip
Triple-chunk chocolate brownies.

For cooking, just follow the instructions on the boxes.

Chocolate Trifle is put together as follows in a Trifle-bowl (or whatever you want to put it in), from the bottom-up.
Brownies
Pudding
Cool Whip
Heath
(repeat twice)

Hands-down my favorite dessert of all time. <333

I'm going to post one of my favorite snacks to make. I made it again recently after not having it for many years. It was something my mom showed my siblings and I how to make. She used to have it as a treat when she would visit her grandma as a girl. There are many versions on the Internet. Yes, it's a strange combination and it sounds gross but it's so tasty. The name was my creation.

Cheesemallow Snacks (Recipe makes 4)


Ingredients

8 saltine crackers
1 slice of cheese
4 big marshmallows

Directions

1. Preheat oven to 350
2. Stack saltine crackers in twos on a small cookie sheet.
3. Take the cheese slice and fold it into fourths. Take each 1/4 slice and place on top of a set of crackers.
4. Finally place a marshmallow on top of the cheese
5. Place cookie sheet into oven for about 4-5 minutes or a bit longer. When the marshmallows have become really expanded and puffy, the snacks are done.
6. Remove snacks from the oven and place the bottom cracker on top of the marshmallow to create a "cracker sandwich"
7. Eat!

OMURICE for two:

Ingredients:
- 1 chicken breast, cubed
- 1 cup of uncooked jasmine rice (Cook it before use! sorry idk how much turns out after it is cooked, i never checked. ^-^; )
- 1/2 cup corn
- 1/2 cup peas
- 1 medium onion, diced
- 1 tablespoon olive oil
- 1/4 cup diced tomatoes
- 3-4 oz tomato sauce
- ketchup

Fried Rice:
1. Coat pan with olive oil and saute the diced onions until they become almost translucent.
2. Add chicken cubes and cook for about 10 minutes, until chickens are no longer raw.
3. Add rice, tomato sauce, and some ketchup (as desired... I personally only added about 1 tablespoon). Stir fry and make sure to coat evenly.
4. Add corn, peas, and diced tomatoes.
5. Place the rice on a plate, and divide the portions into two.

Egg shell thingie:
- 3 large eggs
- 2 teaspoons dairy cream
- salt & pepper
- Olive oil

....Ugh... to lazeh... here watch this video from 3:30 onwards for instructions on this... >.>;;



Well, their fried rice is actually better than mine... I think. I just used whatever I had around the house. ^-^;

Also, lately I've been loving this...

BAKED POTATO FRIES for one:

1 large potato or 2 small potatoes
1 tablespoon olive oil
Paprika
Onion powder
Garlic Power
Salt

0. Preheat oven to 400 degrees
1. Cut the potatoes into fry shapes! Don't make them too thin or you might burn them.
2. Coat potatoes with olive oil and season with paprika, onion powder, garlic powder, and salt. I didn't give portions for these cause it's really up to you. If you want guidelines... then... something like... 1 teaspoon paprika, 2 teaspoon garlic powder and onion powder, and 1/2 teaspoon of salt... i guess? (i just kinda eye it ^-^; )
3. Spread the potatoes onto a cookie sheet with foil. Make sure it is 'single-layered'.
4. Place in oven for 30 minutes. I'm lazy, so I don't turn them at the 10-15 min mark... but you should if you don't like things to be unevenly marked, since the potatoes do turn brown where it sits. XD

Burger Bundles

1 bag of 24 count hard rolls
2 Lb. ground beef
1 can cream of mushroom soup
grated cheese (I leave the quantity here open as all my friends are cheese freaks and we use a ton)
garlic powder
minced onion (optional)

Preheat oven to 375

cut rolls till almost in half and scoop out excess bread put the extra bread guts in a mixing bowl
Brown the ground beef (add onion here if you want it) untill no longer pink place cooked beef in bowl with the extra bread add a bit of garlic powder, cream of mushroom soup and cheese mix untill blended (you may want to add some sour cream at this point for more of a stroganoff flavor)
spoon beef mixture into the rolls so it fills the cavity that you made earlyer place on a baking sheet and place in oven till cheese is melted about 15 min



Chips N' Eggs (this is perfect to make with those chips that are too small for dipping at the end of the bag)

2 tbsp oil
6 eggs beaten
2 cups crumbled corn chips

heat oil in a skillet add chips cook the chips for a few min pour eggs over the chips and continue to cook till eggs are done

serve with tortillas, Cheese, Salsa or what ever you like on eggs EXCEPT Ketchup as it is gross and evil (all those poor tomatoes that would be tastyer in other things)

One of my most favorite and probably the weirdest balance from healthy and unhealthy...

English muffin with egg, cheese, and bacon. >U>
so fucking tasty its worth the calories and fat content

This is per sammich~

1 egg
1 slice of cheese (processed or if not then same size)
1 english muffin (halved)
2-3 strips of bacon
butter
olive oil

Frying pan, toaster, metal spatula, microwave

use olive oil to grease the pan

Cook the bacon and the eggs at the same time in the pan.
(toast the muffin when they are half way done cooking)

Put butter on the muffins (as much as you like XD)

stack the muffin with (in order from bottom up)
muffin bottom, egg, bacon, cheese, muffin top

Put the sammich on a plate (if you haven't already XD) and put it in the microwave for 15-25 seconds.

Ding. And you're done. Careful. It's probably hot. XD

Good with milk XD

posole
three or four frozen chicken breasts
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon dried oregano
1-2 tablespoons canned chipotle peppers in adobo sauce pureed with 4 table spoons water
2-30 oz. cans hominy
1 bay leaf
1 med onion finely diced
2 cloves garlic chopped

in large stock pot add chicken, salt, cumin, oregano and chipotle puree (start with one tablespoon you can always add more if it is not spicy enough later) add liquid from hominy and the bay leaf add enough water to just cover the chicken ( put it in still frozen as I am lazy) bring this to a boil then reduce heat and add onion simmer for one hour
check chicken for doneness after an hour remove and shred when fully cooked. put shredded chicken and the hominy into the soup and simmer about fifty min. add garlic ten min before soup is ready if needed add water to recover broth.. serve with cabbage, limes, sour cream, shredded cheese, tortilla chips, avacado, or what ever your little heart desires

I did this one time... though I put the egg in a coffee cup, poked the yolk and chucked in in the microwave. :3 (luckily it didn't 'splodie)

So yeah, I've kinda-sorta neglected this thread--- without further delay, here's another one:

Breakfast quesadilla~!

Ingredients you'll need
-tortillas (small fajita sized, preferably... Vampy is sometimes NOT lazy and makes 'em homemade and fresh)
-eggs (one per serving, or two if you're just that hungry)
Optional... THINGS:
-Shredded cheese of your choice (Suggestions: Cheddar, colby, swiss, monterey, etc.)
-Meat or vegetable of your choice (Suggestions: Bacon, ham, chorizo, spinach, mushrooms, whatev).

Preparation:
-If you've store bought your tortillas, then all you'll need to do is lightly toast each side of it on a frying pan. This prevents the tortilla from falling apart after you've put the quesadilla together. (For homemade tortillas, I'll make a separate posting with serving suggestions).

-Grease a six inch diameter pan, it's much easier to cook the egg(s) omelete-style to better fit the tortilla. DON'T FREAK OUT, you don't have to worry about flipping it over! Season and slightly scramble the egg(s) so that the yolk and albumen are indistinguishable from one another; let it sit until the bottom is cooked and the outer edges start to lift, then add a tablespoon of water and place a lid on top of the pan. This in turn steams the top of your eggs enabling you to cook it completely without having to flip the entire thing. :] Be sure to lift the lid and check your eggs every so often.... you don't want it to burn.

-Prep whichever additonal ingredient you've chosen to accompany your eggs, IF you've chosen anything else.

-For cheese users, sprinkle your desired amount on the bottom tortilla; it's best to place your eggs on top of this, add your meat/veggies, then add more cheese before placing the top tortilla in a sammich-like fashion. Let it sit for a minute then slice in halves, quarters, or whatever you fancy and enjoy!

I'm all about simplicity and I don't like cooking sometimes in the summer because of the heat so I created a pizza for that purpose. None of this has to be cooked, although you could easily do so. I didn't give specifics for much because a lot of it depends on what you prefer.

Cold Chicken Bacon Ranch Pizza

Need:

- chopped onions
- lettuce
- bag of grilled chicken (the kind you buy refrigerated; 6 oz will do)
- shredded sharp cheddar cheese
- prepared pizza crust
- ranch dressing
- bacon pieces (you can buy them in the dressing section)

1. Take your pizza crust. Mine came in a bag of two so I put the second one in the storage bag for later. If you're making up single servings, slice the crust into 4 pieces. If you're going to serve it with friends, use the whole crust. For single slices, refrigerate what you don't use.
2. Spread on a layer of ranch dressing. This is, of course, your sauce
3. Take the chicken. You'll want to tear the strips into cubes and place around the pizza
4. Spread the bacon pieces (not bits!) around
5. Take the chopped onion and spread around.
6. Add the shredded cheese.
7. Tear the lettuce into pieces and place around the pizza.

Basically,
mayo, turkey, bread, a bit of garlic powder, ground pepper, and maybe a few slices of iceberg lettuce :3

Make that sammich and wabam. Nommy-ness.
You could throw a tomato in there too.

Thanksgiving recipes on the way! I run a more Hispanic household, so aside from the tradition Turkey, stuffing, etc, we have sea food! Here's a dish I made a few nights ago:

Chupe de camarones (Shrimp soup)

A powerful crack-addictive soup dish from the of Peru, Chupe involves a lot of various Shrimp, fish and eggs. Dunno how many sea food lovers we have here, but hope you're interested enough to give it a try! Here's a complete list of ingredients for the fish and soup:

Fish:


1 lb tilapia, cut into bit sized strips
kosher salt
fresh ground black pepper
3 cups flour
4 tablespoons olive oil
1 tablespoon butter

For the soup

2 – 3 tablespoons olive oil
2 tablespoons roasted garlic pulp
1 Scotch bonnet chile, seeded (sub habanero)
1 cup finely chopped baby Vidalia onion (sub yellow onion)
2 medium tomatoes, peeled and seeded
2 tablespoon kosher salt
1 tablespoon fresh ground black pepper
3 cups diced small yellow potatoes (about 1/2 inch cubes)
1/2 cup uncooked long grain rice
64 oz chicken stock
1 can sweet corn, drained
1/2 cup evaporated milk
1 lb large shrimp peeled, deveined and diced
8 poached eggs
1/4 cup chopped fresh basil leaves
2 tablespoons chopped fresh oregano
1/4 cup queso fresco (sub your favorite Mexican crumble cheese)
